At Dadi's & Nani's, we have bottled this ritual exactly as it was passed down — no additives, no shortcuts, no compromises. Sun-dried green mangoes, hand-ground spices, and patience. That is the only recipe we know.

Mango Selection

Only firm, tart raw mangoes are chosen to balance the sweetness of sugar.

Grating and salting

The mangoes are grated, salted, and rested to draw out moisture and enhance their tang.

Slow-fermented

Sugar is mixed separately and slowly simmered with mangoes and spices for a rich, balanced flavour.

Spice Layering & Natural Set

Whole spices are added in stages, and the pickle is left to cool and thicken naturally without additives.
