Each amla is pricked and soaked to reduce bitterness and help absorb the syrup evenly.
The amlas are slowly candied in layered sugar syrup over several days for a balanced sweet-tangy taste.
Finished with cardamom and black salt, then sun-dried to achieve the perfect soft, chewy texture.
