Only thick-fleshed, deep red chillies at peak ripeness are selected — to ensure the perfect texture during curing.
Each chilli is carefully slit by hand and sun-dried briefly to remove surface moisture before stuffing.
Whole spices are freshly ground in small batches and stuffed by hand. Each one gets the right amount of masala so it holds together and cures evenly
Stuffed chillies are packed into jars, covered generously in cold-pressed mustard oil, and cured for several days.
